A Bun-derful Classic: Homemade Hot Cross Buns

Is it really Easter if there aren’t hot cross buns involved?
Soft, spiced and studded with fruity goodness, these golden little heroes are perfect for breakfast, brunch or that “just one more” snack.

Hot Cross Buns Recipe (Makes 12 buns)

Ingredients

For the dough:

  • 500 g strong white bread flour
  • 10 g instant yeast
  • 75 g castor sugar
  • 2 tsp mixed spice
  • 1 tsp ground cinnamon
  • 1tsp salt
  • 300 ml milk
  • 50 g butter
  • 1 large egg
  • 150 g mixed dried fruit or raisins
  • Zest of 1 orange


For the crosses:

  • 75 g plain flour
  • 5 tbsp water


For the glaze:

  • 2 tbsp apricot jam or honey

Method:

Warm the milk and melt the butter together until just lukewarm. In a large bowl, mix the flour, yeast, sugar, spices and salt. Stir in the milk mixture and egg to form a soft dough. Knead until smooth, then as the late great Moira Rose said, fold in the dried fruit and orange zest. Cover and let the dough rise until doubled in size.

Divide into even portions, shape into buns and place close together on a lined tray. Leave to rise again. Mix the flour and water into a smooth paste and pipe crosses over each bun. Bake until golden and irresistible, then brush with warmed jam or honey while still hot for that glossy finish.

Serve warm with butter… and try not to eat three in one sitting (no promises).
