Boerewors and Pumpkin Sishebo
Cook: 70 minutes
Serves 6
Ingredients
1 tbsp cooking oil
1 tbsp Rajah medium curry powder
1 tsp Robertsons barbecue sauce
400 g Boerewors, sliced
2 tomatoes, chopped
1.5 cups water
2 cups pumpkin, peeled and cubed
1 Knorrox beef stock cube
2 tsp Knorr minestrone soup
Method
STEP 1
In a pot, fry the onion in oil until soft.
STEP 2
Add the Rajah Medium Curry Powder and Robertsons Barbeque Spice and fry for 1 minute to release the flavour and aroma. Stir continuously.
STEP 3
Add the sliced boerewors and fry until well browned.
STEP 4
Add the tomatoes and fry for a further 2 minutes.
STEP 5
Add the pumpkin, water and Knorrox Beef Stock Cube, bring to the boil and then turn down the heat and allow it all to simmer for 20 minutes.
STEP 6
Just before serving mix the Knorr Minestrone Soup with 4 tablespoons of water to form a smooth paste, add it to the pot and allow it all to simmer for 5 minutes or until thickened.
Serve with rice or pap.
